- He spent most of his childhood growing up in Stromsburg, Nebraska.
- Growing up, Dawson aspired to make a career in American Football and eventually started wrestling in order to aid his primary sport. However, he soon came to realize that he wasn’t good at American Football and decided to drop his pursuits. After that, he started focusing solely on wrestling.
- During his time at Cross County Community School, he competed in high school wrestling and finished his senior season with a record of 40–8.
- As an amateur, he amassed a record of 8–1 and subsequently started his professional MMA career in 2014. He then amassed a professional record of 11–1 before participating in Dana White‘s Contender Series.
- In 2017, Grant Dawson appeared in the debut season of the program Dana White’s Contender Series 6. On August 17, 2017, he faced Adrian Diaz and won the fight by submission due to a rear-naked choke in round two. With this victory, Dawson was offered a UFC contract.
- On March 9, 2019, he made his Ultimate Fighting Championship (UFC) debut at UFC Fight Night: Lewis vs. dos Santos against Julian Erosa and won the fight via unanimous decision.
- He faced Michael Trizano at UFC Fight Night: dos Anjos vs. Lee on May 18, 2019, and won the fight via a rear-naked choke in round two. This earned him the Performance of the Night award.
- On January 18, 2020, Grant Dawson was scheduled to meet Chas Skelly at UFC 246 but Dawson was flagged by the United States Anti-Doping Agency (USADA). So, the bout was rescheduled for February 29, 2020, at UFC Fight Night: Benavidez vs. Figueiredo in Norfolk, Virginia. However, it was reported on February 7, 2020, that Chas Skelly got injured during one of his training sessions and was forced to withdraw from the event. Skelly was then replaced by Darrick Minner. Eventually, Dawson went on to win the fight via submission in round two.
- On July 19, 2020, he faced Nad Narimani at UFC Fight Night: Figueiredo vs. Benavidez 2 and won the fight via unanimous decision.
- At UFC on ESPN 21, he faced Leonardo Santos on March 20, 2021, and won the fight via knockout in round three. With this victory, he earned the Performance of the Night award.
- On October 2, 2021, Grant Dawson was scheduled to face Carlos Diego Ferreira at UFC Fight Night 193 but Ferreira pulled out of the fight in early September citing an injury. Ferreira was therefore replaced by Rick Glenn who faced Dawson on October 23, 2021, at UFC Fight Night 196. The fight ended in a majority draw.
- As a replacement for Rafael Alves, he faced Jared Gordon on April 30, 2022, at UFC on ESPN 35 and won the bout via rear-naked choke late into the third round.
- On July 1, 2023, he faced Damir Ismagulov at UFC on ESPN 48 and won the bout via unanimous decision.
- At UFC Fight Night 229, Dawson faced Bobby Green on October 7, 2023, and lost via knockout in the first round.
